Cajun Chicken Orzo
Mixing Cajun flavor with a creamy pasta is just the recipe we’d been missing and now it’s a favorite in our house!
This makes about 4 servings.
NOTES I used two large chicken breasts. We had to add another half cup of chicken broth during the cooking process so the orzo wouldn’t dry out. We also added a chopped jalapeno for an extra layer of spice.

Ingredients
3 chicken breasts , cut into small strips
1-3 tbsp Cajun seasoning note: if your seasoning is spicy add ½ tbsp
1 tsp salt
1 tbsp olive oil
½ tbsp butter
1 onion , finely diced
2 garlic cloves , minced
2 tbsp chopped sun-dried tomatoes
1 tbsp tomato paste (tomato purée)
1 cup Orzo pasta
1 cup chicken broth or stock made with a stock cube
1 cup shredded spinach
1/4 cup heavy cream
3 tbsp grated parmesan cheese , plus extra to serve
