Cilantro Lime Chicken

Cilantro Lime chicken is easy and quick!!

Ingredients

  • 3 boneless, skinless chicken breasts

  • 1 tsp olive oil

    Seasoning for chicken:

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp paprika

  • 1/2 tsp cayenne pepper

  • 1 tsp each salt & pepper

    Sauce:

  • 1 fresh lime

  • 2 cups chicken broth

  • 2 tsp heavy whipping cream

  • 1/2 stick of butter

  • 1 finely chopped onion

  • 1 clove garlic, minced

  • pinch of salt & pepper

  • 1 bunch finely chopped cilantro

Here’s how to make it

  • Preheat oven to 350 degrees F.

  • Cut chicken in half and season your chicken (using seasonings listed above)

  • In skillet on medium-high heat pour in your olive oil and a teaspoon of butter and brown your chicken (don’t cook all the way through).

  • Set aside in a greased baking dish.

  • Once chicken is browned, add butter and chopped onion sautéing until translucent

  • Add garlic, finely chopped cilantro, 1 half of lime juice and stir around for 1-2 mins.

  • Add in your chicken broth and heavy whipping cream. And bring to a soft boil.

  • Pour sauce over your chicken and bake at 350 for 45 mins.

  • Serve chicken with white rice boiled in chicken broth. The sauce is absolutely amazing and flavorful served over the rice.
