Crockpot Chicken Parmesan Soup

If you love tomato basil soup, this is an elevated version with more protein!

This makes about 8 servings.

NOTES I recommend adding some fresh basil to this soup. I used chicken thighs in mine because that’s what I had on hand. I also skipped the bread crumbs because we had bread to go along with this meal.

Ingredients

  • 3 boneless chicken breasts

  • 1 Tbsp minced garlic

  • 1 can crushed tomatoes (28 oz can)

  • 1 can tomato sauce (15 oz can)

  • 1 tsp salt

  • 1 tsp ground black pepper

  • 2 tsp Italian seasoning

  • 4 cups chicken broth

  • 1 cup parmesan cheese (freshly shaved)

  • 1 cup heavy whipping cream

  • 8 oz rotini pasta (uncooked)

    For the Topping:

  • 1/2 cup bread crumbs

  • 1 tablespoon butter

  • 1 1/2 cup shredded Mozzarella
