Crockpot Loaded Potato Soup

Potato soup is one of my favorite meals. It screams comfort food to me! I’ve always just made my dad’s recipe (which is still going to be in rotation) but I found this slow cooker version that is great and it has bacon and cheese added!

This makes about 8 servings.

Notes: I used about 2 cups of sour cream and omitted the Greek yogurt. I also used about 2.5 cups shredded cheddar and then about 2 oz of chopped Velveeta. I also didn’t thicken mine with cornstarch at the end.

You can’t go wrong with potato soup for dinner and bonus this one is made in the Crockpot!

Ingredients

  • 3 lbs gold potatoes peeled and chopped

  • 2 small onions diced

  • 8 garlic cloves minced

  • 6 cups chicken broth

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic salt

  • 1 tablespoon dried parsley or 3 tablespoon fresh parsley

  • 3 ½ cups cheddar cheese

  • 1 ⅓ cup sour cream

  • ½ cup plain Greek yogurt

  • 4 tablespoon cornstarch plus cold water

  • 10 cooked bacon slices broken into pieces

  • green onions for serving
