Dorito Chicken Casserole

I love casseroles, especially casseroles that use a rotisserie chicken. Easy peasy!

This recipe makes about 8 servings and only takes about 15 minutes to prep for the oven!

Notes for this recipe - Change it up and use Cool Ranch Doritos if you’d like!

Dorito Chicken Casserole is crowd pleaser for sure.

Ingredients

  • 1 pound cooked chicken ( I used a rotisserie chicken)

  • 1 cup sour cream

  • 10 oz can cream of chicken soup

  • 10 Oz Bag of Dorito Chips, crushed

  • 1 cup corn (frozen or canned, but drain if canned)

  • 15 oz can black beans, drained and rinsed

  • 10 Oz can Rotel, drained

  • 1.5 cups shredded cheese (I used pepper jack)

  • 1 packet or 2 tbsp taco seasoning

Here’s how to make it

  • Preheat oven to 350 F.

  • Mix sour cream, cream of chicken soup, and taco seasoning in large bowl. Add chicken, black beans, Rotel, and corn.

  • Add a layer of crushed Doritos to bottom of casserole dish (Maybe a third of your Doritos).

  • Spread out mixture on top of Doritos and top with shredded cheese and rest of the Doritos.

  • Bake for 20 minutes.

  • Enjoy!
