Instant Pot Firecracker Casserole

 
 

We love Taco Tuesday in this house, but sometimes it’s just fun to change it up with a new recipe in place of tacos. This one did NOT disappoint! We made ours spicy, but you definitely don’t have to!

This recipe makes about 8 servings.

Notes for this recipe - I used jalapeno relish in place of the pickled jalapenos and Auntie Nono’s Firecracker Sea Salt in place of regular salt.

Another option for your taco night is this Firecracker Casserole in the Instant Pot. Just throw it all in and you’re done!

Ingredients

  • 1/2 cup chicken broth

  • 1 to 1 1/2 pounds boneless, skinless chicken breast

  • 1/2 cup chopped onion

  • 1/2 tsp salt

  • 1 Tbsp chili powder

  • 1 tsp cumin

  • 1 (16 oz) can Bush’s Chili Beans (don’t drain)

  • 1 (10 oz) can Rotel

  • 1/2 cup diced mild tame pickled jalapenos

  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup

  • 1 bag of Fritos or 8 corn tortillas

  • 2 cups shredded cheddar cheese

  • Other toppings: sour cream, cilantro, salsa etc.
