Leftover Chicken Fajita Soup

We had some leftovers from Chicken Fajita Casserole and I decided to make a different meal with them!

This makes about 8 servings.

Notes: I adapted this recipe for the amount of leftovers we had and for what ingredients I had on hand. You definitely don’t have to follow the recipe below exactly for it turn out delicious!

Using leftovers from chicken fajita night makes a delicious soup!

Ingredients

  • Leftovers from Chicken Fajitas (roughly 3 chicken breasts, 3 bell peppers, and 2 onions worth of leftovers)

  • 3 Tbsp butter. Or avocado oil

  • 1 1/2 quarts chicken broth

  • 1 (15-ounce) can diced tomatoes

  • 1 (4-ounce) can of diced green chiles

  • 2 teaspoons Chorizo Seasoning (or chili and cumin)

  • 1 tsp minced garlic

  • Juice from 1 small orange

  • Juice from 1 juicy lime

  • 1 cup chopped fresh cilantro

  • 1/2 teaspoon sea salt, to taste

  • Avocado, for serving
