Mango Salad
This delicious summer side dish was introduced to my family from my Aunt Lonie while we were visiting her and my uncle in TN. We fell in love with it and she graciously shared with me how to make it. It is our new go-to summer side dish!
This recipe makes about 8 servings.
Notes for this recipe - I thought about adding some red onion to the recipe, but I was afraid it might overpower it. If you try it that way and like it, let me know!

Ingredients
3 mangos, peeled and diced
2 cucumbers, peeled, seeded and diced
1 each red and green bell peppers, diced
1 tablespoon, finely chopped cilantro
1/4 cup pine nuts
1/4-1/2 cup Zesty Italian dressing
Here’s how to make it
Toss all ingredients in a bowl with a lid and refrigerate for at least an hour before serving!
