Mom’s Wild Rice

 
 

I’m not a huge fan of wild rice, in fact, I think this is the first recipe I’ve shared using wild rice! But, what a way to start! This is so healthy and flavorful!

This recipe makes about 8 servings.

Notes for this recipe - You could definitely do this in the Instant Pot or the slow cooker!

A great vegetarian entrée, or side dish!

Ingredients

  • 8 oz Wild Rice, rinsed

  • 1 red onion, chopped

  • 1 bell pepper, chopped (any color is fine)

  • 1/2 - 1 lb sliced mushrooms

  • 2-4 stalks celery, sliced

  • 1 (6 oz) can tomato paste and 1 can water

  • 15 oz can diced tomatoes

  • 2 Tbsp onion powder

  • 1 Tbsp minced garlic

Here’s how to make it

  • Sauté onion, bell pepper, celery, and mushrooms in olive oil in dutch oven or large pot over med-hi heat. (About 4-5 minutes)

  • The last minute or so, add minced garlic.

  • Add rice, tomato paste, water and diced tomatoes.

  • Cook on medium until heated through. Lower to low and cook, covered for 1-2 hours without stirring.
