Smashed Garlic Potatoes are so simple and have so much flavor. There’s crispy edges and soft potato insides. It’s the perfect side dish!

Ingredients

  • 1 ½ pounds baby potatoes

  • 4 tablespoons unsalted butter, melted

  • 3 cloves garlic, minced

  • 1 tablespoon finely minced fresh parsley

  • 1/2 teaspoon kosher salt, plus some for boiling

  • 1/4 teaspoon coarsely ground black pepper

  • 1/4 cup grated Parmesan cheese
