Steven and Mandy’s Shrimp and Grits

Steven loves coming up with easy concoctions in the kitchen and finally decided to share one with y’all! This shrimp and grits is so creamy and savory, you’re gonna love it.

This makes about 4 servings.

Notes: If you don’t like grits you could definitely serve this over rice.

Shrimp and grits is a one of those dishes you can fix many different ways, but this is our own take on it. Enjoy!

Ingredients

  • 1 lb shrimp (peeled and deveined, tails off), uncooked

  • 4 slices bacon, chopped

  • 1 stick of butter

  • 2 large tomatoes, finely diced

  • 1 shallot, finely diced

  • 3 serrano peppers, finely diced (leave out if you don’t like spicy)

  • 2 Tbsp chopped basil

  • 3 garlic cloves, finely diced

  • 3 Tbsp all-purpose flour

  • 2 glugs sherry cooking wine (1/3 cup or so)

  • 1.25 - 1.5 cups chicken broth (or seafood broth)

  • salt and pepper to taste

  • 1-2 tsp Auntie Nono’s Seafood Seasoning

  • grits (quick cooking) - however much you’d like

Here’s how to make it

  • Heat a large skillet to medium high and add chopped bacon, cooking until crispy. Remove and leave behind 1-2 Tbsp bacon grease.

  • Add stick of butter and melt completely.

  • Add shallot, peppers and garlic, cooking for about one minute.

  • Add basil and cook for another 30 seconds.

  • Add flour and combine to make a rue. Stirring/cooking for about a minute. Add salt and pepper to taste.

  • Next, add tomatoes and stir. Now add sherry cooking wine while still stirring.

  • Next, add in chicken broth to your liking (the amounts are not exact). Add Auntie Nono’s Seafood Seasoning.

  • Reduce heat to low, cover, and simmer for 20 minutes - stirring occasionally.

  • After 10 minutes, make your grits according to package directions. (We used quick cooking grits)

  • When there’s only 3-5 minutes left, you’ll add your thawed, uncooked shrimp to the sauce, bump the heat up to med-hi and cover until cooked.

  • We added cheese to our grits before serving. Serve and enjoy!
