Turkey and Herb Rice Skillet
This dinner was created using all the things I had on hand and needed to use before they went bad. And guess what?? It was DELICIOUS!
This makes about 6 servings.
Notes: Use whatever veggies you have on hand!

Ingredients
1 box Herb and Butter Rice A Roni
1 Tbsp olive oil
2 Tbsp butter
2.5 cups water
1 lb ground turkey
1 small onion, diced
1 bell pepper, diced
2 small squash, sliced
1 broccoli crown, chopped into bite-sized pieces
2-3 Tbsp pesto
handful of parmesan cheese
salt and pepper to taste
Here’s how to make it
Heat a large skillet to medium high and add oil.
Brown ground turkey along with onion and bell pepper. Salt and pepper as desired.
After turkey is done browning, remove all to a plate lined with a paper towel.
Add to the same skillet 2 Tbsp butter and dump rice (without spice packet) in. Stir around and cook until it’s slightly browned.
Add water and allow to come to a boil. Add squash and broccoli, turn temp to almost low and cover with lid. Allow to simmer for 15 minutes.
Now, add your turkey back in and the seasoning pack from the Rice A Roni box. Stir and let it cook for another 10 minutes.
At this point, I wanted to add pesto in. You don’t have to if you don’t like it.
Sprinkle with cheese and allow to melt.
