Asian Chicken Marinade

We marinated our chicken in this Asian marinade and then grilled them on skewers along with some veggies and it was just the best summer dinner!

This makes about 4 servings.

NOTES We used chopped chicken thighs. I also used ginger paste instead of fresh ginger.

We couldn’t get enough of these Asian grilled chicken skewers!

Ingredients

  • 1-1 1/2 lbs boneless skinless chicken breasts (about 3-4 breasts)

  • 1/4 cup low-sodium soy sauce or tamari

  • 2 Tbsp olive oil

  • 2 Tbsp fresh lime juice

  • 1 Tbsp honey

  • 1 Tbsp grated fresh ginger or ¼ teaspoon dried ginger

  • 1 garlic clove , minced or crushed

  • After they marinated for a few hours, and we had soaked our bamboo skewers in water for a few hours, it was time to assemble our skewers.

  • I had green and red bell peppers on hand, as well as some sweet onion. I added all of that to the skewers and we grilled them for about 12 minutes, turning them once about halfway through!
