Avocado and Feta Dip

This dip lasted about 15 minutes in my house. I wish I would have made more! It’s SO good and perfect for the summer time!

This makes about 4 cups.

NOTES I used a regular large tomato and removed the really “seedy” parts.

Such a fun dip that sneaks in some veggies without you really even noticing!

Ingredients

  • 2 ripe medium avocados, fleshed and diced

  • 4 ounces feta (block will yield best taste and texture)

  • 3 medium Roma tomatoes, seeded and diced

  • 1/3 cup diced red onion

  • 2 cloves garlic, minced

  • 1/2 cup chopped parsley (or cilantro)

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon apple cider vinegar (or white vinegar)

  • 1/2 teaspoon fine sea salt, or to taste
