cauliflower salad
Need a great side dish for dinner tonight or one you can take to a get-together? Here’s an easy one that’s super tasty, I mean….it has bacon in it. Need I say more?
This recipe makes about 6 servings and only takes about 15 minutes to put together.
Notes for this recipe - Double or even triple this recipe for a large gathering! The amount of mayo depends on your liking. Karina notes you don’t want this “swimming” in mayo, just enough to coat everything and hold it together. You could also do a mixture of cauliflower and broccoli, like I did in the video below.

Ingredients
1 large head of cauliflower, fresh (not frozen)
1 med. sized red onion, diced
2 Tbsp lemon juice, fresh or bottled
1 lb bacon, cooked til crispy and crumbled
2 cups shredded sharp cheddar cheese (or extra sharp)
1 - 1.5 cups mayonnaise (This is an estimate, see Notes above)
Salt & Pepper to taste
Here’s how to make it
Break up cauliflower into bite-sized pieces and add to a large bowl. Add onion, salt and pepper, and lemon juice. Mix well.
Next, add in cheese and bacon crumbles. Stir to combine.
Lastly, add mayo (I suggest adding in increments to make sure you don’t add too much).
Cover and refrigerate until ready to serve. Will last 2-3 days in the refrigerator.
