Chicken and dumplings has never been a favorite of mine. I don’t think I ever made them until now. But this was a huge hit in our house and will be the only way I make them!!

This recipe makes about 6-8 servings and only takes about 20 minutes of prep time plus 3 minutes cook time in the Instant Pot!! (Take into account the time it takes to come to pressure.)

Notes for this recipe - Use any type of frozen mixed veggies you’d like. We chose broccoli, cauliflower and carrots. You could also use chicken breasts if you prefer.

Instant Pot Crack Chicken & Dumplings take a classic dish to a new level!

Ingredients

  • 6 slices of bacon, uncooked and chopped

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 3 cups chicken broth

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized chunks

  • 16 oz bag frozen mixed veggies, don’t thaw

  • 3 Tbsp dry ranch dressing powder

  • 12 oz container refrigerated biscuits (cut each biscuit into 4 pieces)

  • 1.5 cups half & half (or milk)

  • 1 cup shredded cheddar cheese

  • Salt & pepper to taste

  • sliced green onions (optional, for garnish)
