Cheesy Southwest Chicken Tortilla Soup
When you need a quick dinner and if your family loves cheesy goodness, this is the perfect recipe for you!
This recipe makes about 8-10 servings.
Notes for this recipe - I added another 1/2 cup of broth to thin the soup a bit. I also think black beans would be a great additon!

Ingredients
3 chicken breasts, cooked and shredded (I use a rotisserie chicken, cuts the time in half)
2 (15oz) jars of Tostitos Salsa Con Queso
1 can of cream of chicken (10.5oz)
1 cup sour cream
1 ¾ cups of chicken broth or 1 14.5oz can
½ can fire roasted diced green chilies
1 1/2 cups of frozen corn
1 packet of taco seasoning or 2 tablespoons or season to your liking (can use homemade seasoning)
Optional: Add cilantro, Tostito scoops or strips, avocado and a dollop of sour cream
Here’s how to make it
For chicken if not using rotisserie:
Preheat the oven to 350, sprinkle salt and pepper on each side and bake for 30 minutes covered with foil! Remove from oven then shred with a fork or hand mixer (this shreds super well).For soup:
Throw everything in a large pot on medium heat and continuously stir!
