Chicken and Zucchini Casserole

I’ve made casseroles similar to this one, but I believe my family agrees that this is the one to beat! The addition of the zucchini to this casserole is the perfect touch.

This makes about 8 servings.

Notes: You could add any soft veggie to this! Also, if you are looking for a way to make it even quicker, use a rotisserie chicken!

This casserole is warm and comforting but not as heavy as you might think! The addition of the zucchini brightens and lightens. A new family favorite!

Ingredients

  • 1 small rotisserie chicken (pulled & shredded) or 3 chicken breasts cooked and shredded

  • 3 medium sized zucchinis (diced)

  • 1 (6oz) box Stove Top chicken stuffing mix

  • 1/2 cup butter (melted)

  • 1 (10oz) can cream chicken soup

  • 1/2 cup sour cream
