Chicken and Zucchini Casserole
I’ve made casseroles similar to this one, but I believe my family agrees that this is the one to beat! The addition of the zucchini to this casserole is the perfect touch.
This makes about 8 servings.
Notes: You could add any soft veggie to this! Also, if you are looking for a way to make it even quicker, use a rotisserie chicken!

Ingredients
1 small rotisserie chicken (pulled & shredded) or 3 chicken breasts cooked and shredded
3 medium sized zucchinis (diced)
1 (6oz) box Stove Top chicken stuffing mix
1/2 cup butter (melted)
1 (10oz) can cream chicken soup
1/2 cup sour cream
