Bacon Pimento Cheese Corn Muffins

These are, HANDS DOWN, the best corn muffins I’ve ever eaten. I love that the bacon and pimento cheese tones down the “sweetness” of the jiffy mix, making these more of a savory bread to go with your meal!

This makes about 10 servings.

NOTE: I forgot to take my egg out to come to room temperature, so I just but it in a glass with luke warm water for about 5 minutes and it was perfect.

Bacon pimento cheese corn muffins are my new favorite!!

Ingredients

  • 5 ounces pimento cheese spread

  • 1/4 cup butter, melted

  • 1/4 cup sour cream

  • 1 large egg, room temperature

  • 1 package (8-1/2 ounces) cornbread/muffin mix

  • 4 bacon strips, cooked and crumbled
