Chicken Brunswick Stew

 
 

One of my favorite dishes at local BBQ restaurants is a cup of Brunswick Stew. This recipe uses chicken to recreate this soup and the flavors are ON POINT!! Perfect for fall and winter! Make the entire batch and freeze half like we did!

This recipe makes about 12 servings.

Notes for this recipe - I used a large rotisserie chicken for this one!

Ingredients

  • 6 cloves fresh garlic, coarsely chopped

  • 2 (15-oz) can lima beans, drained

  • 8 slices bacon

  • 2 (14.5-oz) can fire-roasted diced tomatoes

  • 1 can black beans, drained and rinsed

  • 5 cups chicken broth (or stock)

  • 1 teaspoon salt

  • 2 teaspoons pepper

  • 2 (9-oz) packages fully-cooked chicken breast

  • 1 big package of frozen corn

  • 1 onion chopped

  • 4 tablespoons chipotle pepper sauce

  • 1 cup barbecue sauce

  • 2/3 cup apple cider vinegar

Here’s how to make it

  • Cook bacon, remove from pan.

  • Cook chopped onions in bacon grease until tender, then add garlic and cook until aromatic.

  • Dump all ingredients listed above in crockpot, then add the cooked garlic and onions.

  • Cook on high 3-4 hours or on low 5-6 hours.
