Crockpot Jambalaya

 
 

There are many different ways to make a Jambalaya, but this one packs so much flavor and is made in the Crockpot!

This recipe makes about 6-8 servings.

Notes for this recipe - I had to crank my Crockpot up to high for the last hour so that the rice would cook completely.

We love a good jambalaya and this was the first time we tried it in the slow cooker. It was so rich and flavorful!

Ingredients

  • 30 oz crushed tomatoes

  • 4 oz tomato paste

  • 2 Tbsp Worcestershire sauce

  • 3 cups chicken broth

  • 1 can diced green chiles

  • 1 Tbsp Creole seasoning

  • 1 cup diced celery, onion and bell pepper

  • 3 cloves minced garlic

  • chicken

  • 12 oz smoked sausage, cut into 1/4 inch slices

  • 1.5 cups white rice, uncooked

Here’s how to make it

  • Spray slow cooker with non-stick spray.

  • Add all ingredients EXCEPT sausage and rice to slow cooker.

  • Cook on low for 2-3 hours. Remove chicken and cut into bite-sized pieces. (It's okay if chicken isn't done cooking yet).

  • Add chicken back into slow cooker. Also add sausage and rice.

  • Cook on low for another 2-3 hours or until rice is done. Enjoy!
