Creamy Bacon Mushroom Soup

This rich and creamy soup is so delicious and makes you feel fancy. :)

This makes about 8 servings.

NOTES I cut the recipe in half since Steven and I are the only ones who like mushrooms. I also used pre-shredded (bagged) 5 Italian Cheeses instead of the Swiss cheese.

This soup is so creamy and rich in flavor!

Ingredients

  • 10 bacon strips, diced

  • 1 pound sliced fresh mushrooms

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 1 quart heavy whipping cream

  • 1 can (14-1/2 ounces) chicken broth

  • 1-1/4 cups shredded Swiss cheese

  • 3 tablespoons cornstarch

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 3 tablespoons cold water

  • Minced fresh parsley, optional
