Italian Stew
Italian food is always a hit in our house and this Italian Stew was no exception. This reminded me of a vegetable soup but with lots of extras added in. Your family will love this!
This recipe makes about 6-8 servings.
Notes for this recipe - I used a full pound of Italian sausage.

Ingredients
3/4 lb Italian sausage
1 small onion, chopped
1 garlic clove, minced
3-4 cups low sodium beef broth
1 (14 oz) can stewed tomatoes, cut up
1 (8 oz) can tomato sauce
2 carrots, peeled and thinly sliced
1 tsp dried basil
1 tsp dried oregano
9 oz frozen cheese tortellini
1 small zucchini, sliced
2 Tbsp fresh parsley, or 1 Tbsp dried
Grated Parmesan cheese for topping each bowl
Here’s how to make it
In a large soup kettle, cook sausage and onion over medium heat until meat is no longer pink and onion is tender. Drain. Add garlic. Cook and stir for 1 minute.
Stir in broth, tomatoes, tomato sauce, carrots, basil and oregano. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes.
Cover and cook about 10 minutes more or until veggies are almost done.
Stir in frozen tortellini and zucchini. Cover and simmer for 20 minutes or until tortellini is tender. Stir in parsley.
Serve and top each bowl with grated cheese!
