Italian Stew

 
 

Italian food is always a hit in our house and this Italian Stew was no exception. This reminded me of a vegetable soup but with lots of extras added in. Your family will love this!

This recipe makes about 6-8 servings.

Notes for this recipe - I used a full pound of Italian sausage.

It’s like vegetable soup but with yummy extras!

Ingredients

  • 3/4 lb Italian sausage

  • 1 small onion, chopped

  • 1 garlic clove, minced

  • 3-4 cups low sodium beef broth

  • 1 (14 oz) can stewed tomatoes, cut up

  • 1 (8 oz) can tomato sauce

  • 2 carrots, peeled and thinly sliced

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 9 oz frozen cheese tortellini

  • 1 small zucchini, sliced

  • 2 Tbsp fresh parsley, or 1 Tbsp dried

  • Grated Parmesan cheese for topping each bowl

Here’s how to make it

  • In a large soup kettle, cook sausage and onion over medium heat until meat is no longer pink and onion is tender. Drain. Add garlic. Cook and stir for 1 minute.

  • Stir in broth, tomatoes, tomato sauce, carrots, basil and oregano. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes.

  • Cover and cook about 10 minutes more or until veggies are almost done.

  • Stir in frozen tortellini and zucchini. Cover and simmer for 20 minutes or until tortellini is tender. Stir in parsley.

  • Serve and top each bowl with grated cheese!
