Crockpot Mexican Beef Stew
Tired of regular beef stew and want to change it up? If you love Mexican flavors, this is the answer for you.

Ingredients
1 lb beef stew meat (1-1/4-inch pieces)
2-3 red potatoes, cut into 3/4-inch cubes
2 cups frozen corn (about 10 ounces), thawed
2 medium carrots, cut into 1/2-inch slices
1 medium onion, chopped
2 garlic cloves, minced
1-1/2 tsp dried oregano
1 tsp ground cumin
1/2 tsp salt OR 1/2 tsp Firecracker Sea Salt (Auntie Nono’s)
1/4 tsp crushed red pepper flakes (optional)
2 cups beef stock
1 can (10 ounces) diced tomatoes and green chiles, undrained
Here’s how to make it
In a 6-qt. slow cooker, combine all ingredients. Cook, covered, on low until meat is tender, 6-8 hours.
Serve with sour cream and sliced green onions if you’d like.
