Deconstructed Taco Stuffed Peppers

 
 

Taco Tuesday just got more interesting and more tasty! Give these Deconstructed Taco Stuffed peppers a try. It takes less than 30 minutes to prepare and your family will gobble it up!

This recipe makes about 6-8 servings.

Ingredients

  • 1 lb ground beef

  • 1 large red pepper, diced

  • 1 medium onion, diced (optional, Carlee’s recipe didn’t include this)

  • 1 can corn, drained

  • 1 can black beans, drained and rinsed

  • 1 can Rotel, undrained

  • 1/2 cup shredded cheese (use whatever kind you like!)

  • 2-3 Tbsp taco seasoning

  • seasonings to taste

  • cooked rice

  • Optional toppings: sour cream, cilantro and hot sauce


Here’s how to make it

  • Brown ground beef. As it’s browning, season however you like (I just added a bit of garlic powder because you’ll be adding taco seasoning later). Drain grease.

  • Add diced pepper and onion to ground beef and cook until softened (3-5 minutes).

  • Add Rotel, corn, black beans, and taco seasoning and simmer for 5 minutes or until most of the liquid has absorbed.

  • Add cheese and stir til melted.

  • Serve over rice and with desired toppings!
