Pesto Turkey Skillet

Pesto Turkey Skillet is amazing! We were shocked by just how much flavor is packed into this meal!

This makes about 4 servings.

Notes: I had 3 small squash in my fridge, so I subbed those in place of the zucchini. I also left out the peas, because I just don’t love them. This recipe is so versatile!

This simple, light meal is a perfect 30 minute dinner in the summer!

Ingredients

  • 1 cup uncooked orzo or other small pasta

  • 1 pound ground turkey

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1 tablespoon olive oil

  • 1/2 medium yellow onion diced

  • 2 cloves garlic minced

  • 1 medium zucchini diced

  • 1 cup frozen corn

  • 1 cup frozen peas

  • 2-3 tablespoons pesto

  • 1/4 cup freshly grated parmesan cheese

  • Salt and pepper to taste
