HEALTHY MOROCCAN CHICKEN
We love trying new flavors at our house and this one was definitely something different to us! Big thanks to Juliette for sharing this recipe with us!
This recipe makes about 3 servings and although it has a lot of ingredients, is super easy to prepare.
Notes for this recipe - Feel free to change the seasonings/spices to your liking! We didn’t have turmeric on hand so I skipped that and it still turned out great.

Ingredients
3 chicken breasts, cut into chunks
1-2 Tbsp olive oil
Spice Mix (can be adapted to whatever you have in the cupboard!): 1 tsp ground cumin, 1 tsp paprika, half tsp ground ginger, half tsp ground cinnamon, half tsp turmeric, salt and pepper
2-3 Tbsp molasses
Lemon juice
Vegetable stock (broth)
Handful of golden raisins or sultanas
Dried Couscous
2 courgettes sliced (zucchini)
1 red onion sliced
1 tsp crushed garlic
For garnish- Fresh parsley, pomegranate seeds, natural yoghurt or sour cream.
Here’s how to make it
Allow chicken to marinade in spice mix and olive oil for at least 30 minutes.
Cook chicken on medium-high heat in a large skillet until cooked through and remove from pan.
In same skillet, sauté garlic, courgettes (zucchini) and red onion until soft. Add chicken back in, drizzle over molasses and cook for few minutes until sticky.
While chicken is cooking, cook couscous in vegetable stock according to packet instructions.
Deglaze the chicken skillet and thin the sauce with about a 1/4 cup veggie stock.
When couscous is cooked, squeeze in some lemon juice and add in the raisins and fork through to fluff up.
Plate up, serve with your choice of side and garnishes. Enjoy!
