Don’t let me lose you when you read the ingredients on this one! I know it’s different. But, y’all….it’s GOOD. The leftovers were delicious, too!

This recipe makes about 6-8 servings.

Notes for this recipe - Use a little more balsamic vinegar if you like and also, the amount of garlic is up to you! We topped it with grated parmesan cheese and loved it!

This recipe is so unique, but leaves a lasting impression!!

Ingredients

  • 1 package mild Italian sausages, remove casings

  • 1 package frozen or fresh cheese tortellini

  • 1 Tbsp olive oil

  • 1 green bell pepper, sliced into strips

  • 1 yellow onion, sliced into strips

  • 4 Tbsp balsamic vinegar (Megan uses 6, I used 5)

  • a LOT of minced garlic :)

  • 1 can pineapple chunks in heavy syrup (be sure to get the kind in heavy syrup!)

Here’s how to make it

  • In a large skillet over med-hi heat, chop/crumble and cook sausages until browned.

  • Boil tortellini according to package directions, drain and set aside.

  • Remove cooked sausage from skillet, add olive oil and sauté peppers and onions until softened.

  • Add sausage back to skillet and also add tortellini. Stir to combine. Add entire can of pineapple chunks - do NOT drain!

  • Add garlic and balsamic vinegar. Let simmer and mix together for about 5 minutes.

  • Serve and enjoy! We topped it with grated parmesan cheese.
