Mexican Zucchini and Corn

 
 

We struggle to know what to make as a side dish for Taco Tuesday and this recipe swooped in to save the day! We love this and I think you will too!

This recipe makes about 4-6 servings.

Notes for this recipe - Feel free to control the level of spice on this - add more if you prefer!

Mexican Zucchini and Corn is the perfect side dish for tacos!

Ingredients

  • 2 cups of chopped zucchini

  • 1/2 cup diced sweet onion

  • 3 Tbsp of butter

  • 2 cups fresh, or frozen corn

  • 2 tsp taco seasoning

  • 2 Tbsp of butter

Here’s how to make it

  • Sauté the zucchini and onion in the 3 Tbsp butter until onions start to go translucent- about 5 minutes.

  • Add in the corn, taco seasoning, and remaining butter.

  • Sauté for 5 more minutes over med high heat.

  • Enjoy!
