Mexican Zucchini and Corn
We struggle to know what to make as a side dish for Taco Tuesday and this recipe swooped in to save the day! We love this and I think you will too!
This recipe makes about 4-6 servings.
Notes for this recipe - Feel free to control the level of spice on this - add more if you prefer!

Ingredients
2 cups of chopped zucchini
1/2 cup diced sweet onion
3 Tbsp of butter
2 cups fresh, or frozen corn
2 tsp taco seasoning
2 Tbsp of butter
Here’s how to make it
Sauté the zucchini and onion in the 3 Tbsp butter until onions start to go translucent- about 5 minutes.
Add in the corn, taco seasoning, and remaining butter.
Sauté for 5 more minutes over med high heat.
