Mom’s Cajun Beans and Rice

 
 

This Cajun flavored Instant Pot meal is so easy and is packed with a great meaty flavor. This makes enough to feed a crowd!

This recipe makes about 8-10 servings.

Notes for this recipe - Instead of water and Better than Bouillon, you can use 6 cups of beef broth.

Ingredients

  • 1 bag Hurst Hambeens 15 Bean Soup, Cajun, 20 oz

  • 1-2 Hillshire Farm Cajun Style Andouille Smoked Sausage, 13 oz

  • 6-7 tsp Better Than Bouillon Premium Roasted Beef Base (or chicken or garlic)

  • 1 onion chopped

  • 2 cloves fresh garlic, crushed

  • Olive Oil or Butter to coat bottom of pot

  • 6 cups of water

  • Optional: baby carrots and celery, sliced

  • Toppings: hot sauce, parsley or cilantro, sour cream

Here’s how to make it

  • Open bag of beans and take out seasoning packet.  Look through beans to make sure no rocks.  Rinse in colander and set aside. 

  • Turn Instant Pot to saute, add some olive oil or butter to coat bottom. 

  • Slice sausage into bite size.  I usually cut into half moon shape. 

  • Saute sausage until browned.  Remove. 

  • Add onion and saute for about 3 min.  (if you are using carrots and/or celery, saute with onions)

  • Add garlic and saute for 30-45 seconds. 

  • Add water and bouillon or broth and scrape the bottom of pot. 

  • Add beans.  Your beans and veg should be covered with liquid, if not add a bit more. 

  • Add seasoning packet and mix.

  • Put on lid.  Make sure it is in sealed position. Set it on manual for 40 minutes.  It will take a while to come to pressure.  After it is finished,  let it natural release for about 20-30 minutes then release the rest of the pressure. 

  • Test beans for doneness.  Should be cooked through but still a little firm. 

  • Add sausage back in. 

  • Serve over rice, add a little cilantro/parsley, a dash of hot sauce or sour cream. 

  • If you have leftovers be aware that beans will soak up liquid so it won't be stew like unless you add more liquid before re-heating.
