Mandy’s Sausage and Potato Casserole
Let’s turn potatoes au gratin into a main dish, shall we? This dinner is so yummy!
This makes about 6-8 servings.
NOTES Use the seasonings you’d prefer!

Ingredients
1 lb sausage
1 onion, diced
3 cups thinly sliced potatoes (peeled)
1 can cream of mushroom soup
1 (4 oz) can diced green chilis
3/4 cup milk
2 cups shredded cheddar cheese
salt and pepper to taste
1 tsp garlic powder
1/2 tsp chipotle chili powder
Here’s how to make it
Preheat oven to 350 degrees F.
In a large skillet, cook and crumble sausage along with diced onions. Once browned, pour onto a paper towel lined plate to drain.
Meanwhile, mix cream of mushroom soup, diced chilis, milk, and seasonings in a bowl and set aside.
In a greased 2 qt baking dish, layer 1/2 of the potatoes, followed by 1/2 of the sausage, 1/2 of the cheese and 1/2 of the soup mixture.
Repeat the layer one more time (excluding the cheese the second time - you’ll save that last cup of cheese for the top at the end of the baking time)
Cover tightly with aluminum foil and bake at 350 for 1 hour.
At the end of the hour, remove foil and top with remaining cheese. Place back in the oven for 3-4 minutes to melt.
