Steven’s Cod and Corn Chowder
Even if you aren’t the biggest fish/seafood fan, this chowder is a must! It doesn’t have a fishy taste and is so comforting and filling.
This makes about 4 servings.
NOTES Feel free to use whatever fish you’d like!

Ingredients
3 Tbsp butter
1.5 cups frozen corn (or a can of corn, drained)
1 shallot, diced
6 (or so) small gold potatoes, quartered into bite-sized pieces
1 tsp minced garlic
2 Tbsp flour
1 cup chicken broth
1 1/4 cups milk
1 cup half and half
1 tsp kosher salt (or 1/2 tsp regular salt)
1/2 tsp black pepper
1/2 lb cod, cut into small chunks (about 1/2 inch each)
Here’s how to make it
In a med-large saucepan, heat butter over medium heat until melted.
Add shallots, potatoes and garlic and sauté for 2-3 minutes.
Sprinkle flour over mixture in the pan and continue to stir and cook for a couple minutes (until flour is no longer raw).
Add chicken broth and whisk until no lumps remain.
Add milk, half and half, corn and salt and pepper and bring to a simmer over medium heat (we covered the pot here).
Once it comes to a simmer, stir often and allow to cook until it thickens and potatoes are soft. (about 5-6 minutes)
Add fish to pot and allow to continue to simmer for another 3-6 minutes (until fish is flaky and cooked through).
