Sausage and Rice Skillet Casserole

This dinner comes together in about a half hour, which is perfect for busy weeknights. Most of these items are something I keep on hand anyway, so it’s almost like a pantry meal!

Ingredients

  • 2 tablespoons extra-virgin olive oil, divided

  • 12 ounces cooked Italian chicken sausage links not breakfast sausage, cut into 1/4-inch slices

  • 1 red bell pepper cored and 1/2-inch diced (about 1 cup)

  • 1 orange or yellow bell pepper cored and 1/2-inch diced (about 1 cup)

  • 1 small or 1/2 large yellow onion, diced (about 1 cup)

  • 1 teaspoon dried basil

  • ½ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 1 cup instant brown rice (we used white Minute rice)

  • 2 cloves garlic, minced

  • Pinch red pepper flakes optional

  • 1 cup low-sodium chicken broth

  • 1 15-ounce can fire-roasted tomatoes in their juices

  • Chopped fresh parsley, optional for serving
