Seven Can Chicken Tortilla Soup

Dinner in 15 minutes, okay, I can manage that! This 7 can soup tastes so good and we added all our favorite toppings!

This makes about 8 servings.

Notes: I used homemade taco seasoning.

This soup tastes like you’ve done a LOT more than dump some cans in a pot. Adding your favorite toppings makes it even better!

Ingredients

  • 15 oz black beans, drained and rinsed

  • 15 oz pinto beans, drained and rinsed

  • 14.5 oz diced tomatoes, drained

  • 15 oz sweet canned corn, drained

  • 12.5 oz canned chicken breast, drained

  • 10 oz green enchilada sauce

  • 14 oz chicken broth

  • 1.25 ounces taco seasoning OR the following 4 seasonings:

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • 1/2 cup shredded cheddar cheese optional topping

  • 1/3 cup sour cream optional topping

  • 1 diced avocado optional topping

  • 2 cups tortilla chips optional topping
