Sheet Pan Garlic Chicken and Veggies

Sometimes you just need an easy dinner that’s not going to dirty all the dishes in your kitchen. This recipe is just that! AND it’s a super affordable and delicious dinner, too!

This makes about 4-5 servings.

Notes for this recipe - Use whatever veggies you have on hand. If you want to add squash or zucchini, feel free - but I wouldn’t add it until the last 20-30 minutes. Also, I don’t recommend using chicken breasts for this recipe as it would dry out. *If you don’t have Auntie Nono’s, I’d use salt, pepper and garlic powder.

This sheet pan dinner is so easy and flavorful. Your family will love it and you’ll be happy not to have a lot of dishes to wash!

Ingredients

  • 4-8 bone in, skin on, chicken thighs or drumsticks (or a mix)

  • 15-16 cloves of whole garlic, peeled

  • 2-3 large potatoes, cubed into 1.5 inch pieces

  • 1/2 bag of baby carrots

  • 1 onion, quartered

  • 4-5 Tbsp olive oil

  • 2 Tbsp Auntie Nono’s Everything seasoning

  • 2-3 tsp paprika

Here’s how to make it

  • Preheat oven to 375 F. Line large baking sheet with aluminum foil.

  • Pat chicken dry and place on baking sheet. Add garlic cloves, onion, potatoes and carrots.

  • Drizzle olive oil over everything on the pan. Sprinkle seasonings over top and mix everything together with your hands.

  • Make sure chicken is skin side up before putting in the oven.

  • Bake at 375 for 1 - 1.5 hours. Mine took an hour.

  • If you want the skin to be a bit crispy, turn over to broil for 3-5 minutes at the end. Watch it to be sure it doesn’t burn.
