Asian Cucumber Salad

I love a traditional tomato and cucumber salad in the summer and this one just tweaks it a tad to make it Asian-inspired and we LOVE it.

This makes about 6 servings.

NOTES I didn’t have an English cucumber and it was totally fine.

The perfect side dish in the summer, this is so refreshing!

Ingredients

  • 1 large Cucumber, seedless English variety, very thinly sliced

  • ¼ sweet onion, very thinly sliced

  • 1/3 cup rice vinegar

  • 1 Tbsp sesame seeds, toasted

  • 1 Tbsp dill , minced & fresh OR ½ teaspoon dried dill weed

  • ¾ tsp salt

  • ¾ tsp sugar

  • ¼ tsp red pepper flakes, crushed
