Jalapeno Cheddar Corn Muffins
Want to change up your corn muffins? Add some spicy to that sweet Jiffy mix! These aren’t overly spicy (you remove the seeds and ribs of the jalapenos), but they do have a little heat to them.
This makes about 12 servings.

Ingredients
8.5 oz Jiffy cornbread box
2/3 cup buttermilk (instead of regular) or 1/3 cup regular milk
1 egg
1 cup chopped jalapenos (about 3), seeds removed, reserve some for topping
1 cup shredded cheddar cheese, reserve some for topping
