Chicken Lo Mein

This Asian dish took 20 minutes to make and was better than ordering takeout (cheaper and faster!). You totally need to make this for your family, they will thank you!

This makes about 6 servings.

Notes: I used regular cabbage. I also used ginger paste.

Ingredients

CHICKEN:

  • 1 Tbsp canola oil

  • 1 pound chicken breasts, cut into thin strips

  • 3 cloves garlic, minced

  • 2 Tbsp ginger, grated

  • 2 Tbsp soy sauce

    VEGGIES:

  • 1 (8 oz) mushrooms, thinly sliced (baby bellas or shittake)

  • 1 small onion, finely chopped

  • 1 1/2 cup Napa cabbage, finely shredded

  • 1 cup matchstick carrots

    SAUCE:

  • 1/4 cup chicken stock

  • 1 tsp cornstarch

  • 1 Tbsp sesame oil

  • 1/4 cup soy sauce

  • 1 tsp brown sugar

  • 12 oz pasta, cooked according to package directions
