Copycat Waffle House Hashbrown Bowls
We love us some “Awful Waffle” and wanted to make a different version of their hashbrown bowls at home! I hope you’ll try yours this way next time!
This makes about 4 servings.
NOTES This recipe can’t really be “messed up” so go in whatever direction you’d like!

Ingredients
1 bag Simply Potatoes refrigerated hashbrowns (or a frozen bag, thawed)
1/2 onion, chopped
1 green pepper, chopped
1 lb Andouille sausage, chopped into bite-sized pieces
3-4 eggs
shredded or sliced cheese
olive oil
Here’s how to make it
Warm griddle to med-high and add about a Tbsp of olive oil to heat through.
Place onions and peppers on the griddle and cook until soft, about 3-5 minutes.
Add sausage and continue cooking all together until sausage is starting to brown a bit (another 3-5 minutes).
Remove all of the onions, peppers and sausage to a plate and tent to cover.
Add about 2-4 Tbsp olive oil and then add your hashbrowns. Flatten into one layer. Cook on one side for 3-5 minutes.
Section the hashbrowns so they are easier to flip and then flip until they are golden brown on the other side. Add cheese on top and allow to melt.
Remove them to your individual bowls. Top with onions, peppers and sausage.
Add a little more olive oil to each space where you will fry an egg. Fry to your “doneness” and top your bowls with the egg.
Add a little hot sauce before serving and enjoy!
