Mandy’s Potato Salad

I found this recipe AGES ago, but it’s been our favorite for many years and I love making it for get-togethers in the summer!

This makes about 10-12 servings.

NOTES Feel free to use a different type of potato, but red potatoes are the easiest in my opinion!

Everyone loves this recipe! It’s a classic!

Ingredients

  • 2.5 lbs red potatoes, diced

  • 2 eggs, hardboiled, peeled and chopped

  • 1/2 green bell pepper, diced

  • 1/2 onion, finely diced (I prefer red onion)

  • 8 oz dill relish

  • 1-2 Tbsp mustard

  • 1/2 cup Duke’s mayo

  • 1/2 tsp white sugar

  • salt and pepper, to taste

Here’s how to make it

  • Place diced potatoes in a Dutch oven and fill with water (one inch above the tops of the potatoes). Bring to a boil and boil until fork tender, but not falling apart. (About 10 minutes)

  • Drain, and allow to cool for about 15-30 minutes.

  • Stir all ingredients into the potatoes in a large bowl.

  • Refrigerate for about 2-3 hours before serving!
