Crockpot Ricotta Meatballs

If you are looking for a change to your regular spaghetti night, these Ricotta Meatballs are the answer!

This makes about 10 servings.

Notes: You don’t have to make these in the crockpot, they can be done on the stove or even in the oven. *See the full recipe for details. I also made the full recipe, but froze half the meatballs for a future spaghetti night!

These meatballs are an unexpected surprise when you bite into them! My family LOVED this recipe.

Ingredients

  • 32 oz. marinara sauce

  • ½ cup olive oil, divided

    HERB RICOTTA

  • 15 oz. Ricotta cheese

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1 teaspoons dried parsley

  • 1 teaspoon minced garlic

    MEATBALLS

  • 1 yellow onion, finely diced

  • 3 cloves garlic, minced

  • 1 Egg, whisked

  • ½ cup half and half, can sub cream

  • ½ cup Italian breadcrumbs

  • ½ cup Parmesan cheese

  • 1/3 cup roughly chopped parsley, plus more to garnish

  • 1 teaspoon Italian seasoning

  • 1 teaspoon mustard powder

  • 1 teaspoon Salt

  • ½ teaspoon Pepper

  • 1 lb. ground chuck, 80% lean

  • ½ lb. ground pork, or ground sausage or veal
