Low Carb Stuffed Pepper Casserole

Looking for a low-carb meal that has an amazing flavor and is still super filling? Here it is!

This recipe makes about 6 servings.

Notes for this recipe - If you prefer, you can use rice in this recipe. Either cook it separately and add in, or add plenty more liquid to cook it in this pot with other ingredients. It will increase your cook time by about 20-25 minutes. You could also choose to do ground chicken or turkey instead of ground beef.

Low Carb Stuffed Pepper Casserole is filling and tasty!

Ingredients

  • 1 Tbsp olive oil

  • 1 lb lean ground beef

  • 1 medium yellow onion

  • 1 Tbsp Italian seasoning

  • 2 tsp ground cumin

  • 1 tsp salt

  • 1/2 tsp ground pepper

  • 1/4 tsp cayenne pepper (optional)

  • 3 cloves garlic, minced

  • 12 ounces frozen chopped spinach thawed with as much water squeezed out as possible

  • 1 red bell pepper cored and diced

  • 1 green bell peppers cored and diced

  • 2 cups water

  • 1 can (15 oz) fire roasted diced tomatoes, drained

  • 1 tablespoon Worcestershire sauce

  • 12 oz bag riced cauliflower, warmed thru in microwave

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup shredded pepper jack cheese

  • I made this recipe low carb by substituting cauliflower rice. Because of this, I didn’t need the extra liquid in the original recipe. I used the ingredient list above.
