No Pasta Pasta Salad (aka chicken salad)

So, here’s the deal. Think about how you make a pasta salad…now just replace the pasta with shredded chicken. Ta-da!! Low carb and much healthier!

This makes about 1-2 servings.

NOTES Add whatever fresh veggies you like!

Eat it plain, or on bread like we did!

Ingredients

  • 2 mini cucumbers, diced

  • 1/2 red bell pepper, diced

  • 1/4 cup banana pepper rings, diced

  • 5-6 kalamata olives, diced

  • 1 thin slice of red onion, diced

  • 3/4 - 1.5 cups shredded chicken

  • 1/2 cup cottage cheese

  • 1-2 servings of feta cheese

  • 1-2 servings of Greek dressing
