Sheet Pan Greek Chicken
This dish is easy to make and is bursting with flavor!
This makes about 6 servings.
Notes for this recipe - Use any other seasonings you love!! This can be changed up so easily!

Ingredients
½ cup olive oil
1 lemon, juiced
4 garlic cloves, minced
2 tsp dried oregano
1 tsp dried thyme
1 tsp Dijon mustard
1 tsp kosher salt
½ tsp black pepper
6 chicken thighs, bone-in, skin-on
1 medium zucchini, halved lengthwise and sliced
1 yellow bell pepper, chopped into 1-inch pieces
½ large red onion, thinly sliced into wedges
1 pint cherry tomatoes
½ cup kalamata olives, pitted
¼ cup feta cheese (or more, if you love it like we do)
2 tablespoons finely chopped fresh parsley
